10-minute blueberry jam

VEGAN – GLUTEN FREE – OIL FREE – RAW

The simplest of recipes, this raw jam thickens up thanks to ground chia seeds that disappear completely into the jam. This tastes wonderful on toast, yoghurt, chia pudding or a breakfast muffin. We like it without sweetener but you can add a touch of maple syrup if you wish.

PREP: 10 MINUTES – COOKING: NONE – PORTIONS 1½ CUPS (ABOUT 12 SERVINGS)

INGREDIENTS
2 cups frozen wild blueberries (1 small pack), defrosted
3 tbsp ground chia seeds
Juice of ½ lemon
1/8 tsp cinnamon
2 tbsp maple syrup (optional)

PREPARATION
  1. Mash blueberries with fork in a medium sized bowl until most of the liquid is released but there are still pieces of blueberries. 
  2. Stir in all other ingredients and let sit for 15 minutes until the chia seeds thicken the jam. The jam is ready to eat or incorporate into a recipe.
